Pumpkin pie pancakes

Thanksgiving may be long over, but the leftovers might not be! I know there is probably still some turkey or pumpkin pie sitting in the back of your fridge. Yet, it can get boring trying to finish off the turkey in a sandwich or the pie as it is. So, I thought, why not repurpose them in pancakes?

Servings: 1

Time: 20 Minutes

Difficulty: Easy

Ingredients:

1/4 Cup Old Fashioned Oats

2 tbsp Oat Bran

1 Large Egg

1/4 Cup Pumpkin Pie (excluding crust)

1/4 Cup Banana, Mashed

1/2 tsp Cinnamon

1/4 tsp Baking Powder

Recipe:

1. Blend all the ingredients in a food processor.

2. Heat a skillet on low-medium heat and add half the pancake batter.

3. When bubbles start to form, flip the pancake over. Cook for another minute or so.

4. Repeat steps 2 and 3 for the other half of the batter.
